1 medium onion, finely chopped
2 cloves garlic, minced
2 medium carrots, peeled and chopped
2 celery stalks, chopped
1/4 cup tomato paste
4 cups low-sodium chicken broth or vegetable broth
1 cup skim milk or unsweetened almond milk
1/2 cup dry white wine (optional)
Directions
- Sauté Vegetables
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion, garlic, carrots, and celery. Sauté until the vegetables are soft, about 8-10 minutes.
- Add Tomato Paste
- Stir in the tomato paste and cook for an additional 2-3 minutes, allowing the tomato paste to caramelize slightly
- Add Broth and Spices
