    🛒 Ingredients

    • For the Chickpea Patties:
      • 1 (16 oz) can chickpeas, drained and rinsed (or 1½ cups cooked chickpeas)
      • ½ cup rolled oats (or breadcrumbs for a firmer texture)
      • ½ small onion, finely diced
      • 2 cloves garlic, minced
      • 1 small carrot, grated
      • ¼ cup fresh parsley, chopped (or 1 tsp dried parsley)
      • 1 large egg
      • 1 tsp cumin
      • 1 tsp smoked paprika
      • ½ tsp salt
      • ¼ tsp black pepper
      • 1 tbsp soy sauce (or tamari for gluten-free)
      • 1 tbsp lemon juice
      • 1 tbsp olive oil (for cooking)

    • Process the Patty Mixture:

      • In a food processor, add chickpeas, oats, onion, garlic, carrot, and parsley.
      • Pulse a few times until the mixture is crumbly but still has some texture.
      • Add egg, cumin, smoked paprika, salt, pepper, soy sauce, and lemon juice.
      • Pulse again until the mixture comes together. Avoid over-processing; it should be slightly chunky.
    • Shape the Patties:

      1. Transfer the mixture to a bowl. If too wet, add more oats; if too dry, add a splash of water.
      2. Divide into 4 equal portions and shape into patties (about ½-inch thick).
    • Cook the Patties:

      1. Heat olive oil in a skillet over medium heat.
      2. Cook patties for 4–5 minutes per side until golden brown and crispy.
      3. Remove from heat and let them rest for a few minutes.
    • Assemble the Burgers:

      1. Toast the burger buns (optional).
      2. Spread a layer of mayo or hummus on the bottom bun.
      3. Place a chickpea patty, followed by lettuce, tomato, onion, and avocado.
      4. Top with the other bun and enjoy!
